Spinach Chili Casserole

(my mom's recipe)

 

ingredients

2 16-oz. packages of frozen spinach

1 lb. shredded cheese (monterey jack is best)

2 cans whole green chilis

bisquick mix

eggs (as needed for bisquick-box recipe of biscuits; 1 batch)

milk (as needed for bisquick-box recipe of biscuits; 1 batch)

1/4 tsp paprika

1/4 tsp cumin (optional)

 

optional meat-lover's version

1 16-oz. package plain yogurt (or sour cream, if you're feeling indulgent)

1 - 1.5 lbs. ground beef, browned

1-2 cans chopped green chilis (optional)

 

directions

  1. Preheat oven to 350 degrees.
  2. Cook the spinach.
  3. Brown the meat, if desired.
  4. Cut open the chilis and seed them, so that they will lay flat.
  5. Line the bottom of the casserole dish with the chilis.
  6. Sprinkle a little of the cheese on top of the chilis.
  7. Mix the remaining cheese, spinach, (and yogurt/sour cream, beef, and chopped chilis), and pour/spoon on top of the cheese/chilis.
  8. Mix the bisquick mix as suggested on the box, plus the spices.
  9. Pour the bisquick mix on top.
  10. Bake at 350 for 15-30 minutes or until biscuit-topping is lightly browned.
