Spinach Chili Casserole
(my mom's recipe)
ingredients
2 16-oz. packages of frozen spinach
1 lb. shredded cheese (monterey jack is best)
2 cans whole green chilis
bisquick mix
eggs (as needed for bisquick-box recipe of biscuits; 1 batch)
milk (as needed for bisquick-box recipe of biscuits; 1 batch)
1/4 tsp paprika
1/4 tsp cumin (optional)
optional meat-lover's version
1 16-oz. package plain yogurt (or sour cream, if you're feeling indulgent)
1 - 1.5 lbs. ground beef, browned
1-2 cans chopped green chilis (optional)
directions
- Preheat oven to 350 degrees.
- Cook the spinach.
- Brown the meat, if desired.
- Cut open the chilis and seed them, so that they will lay flat.
- Line the bottom of the casserole dish with the chilis.
- Sprinkle a little of the cheese on top of the chilis.
- Mix the remaining cheese, spinach, (and yogurt/sour cream, beef, and chopped chilis), and pour/spoon on top of the cheese/chilis.
- Mix the bisquick mix as suggested on the box, plus the spices.
- Pour the bisquick mix on top.
- Bake at 350 for 15-30 minutes or until biscuit-topping is lightly browned.
